Veggie Egg Bites

These little Starbucks dupes are 0 points and SO incredibly good!!

FULL of flavor and dare I say......BETTER then Starbucks and less points & calories!

RECIPE:

8 eggs

1 medium zucchini - diced

Handful of baby spinach- roughly chopped

1/2 cup feta cheese

2 teaspoons onion or garlic salt

1 teaspoon pepper

Splash of almond milk


Spray a nonstick skillet with cooking spray and sauté veggies until softened.


While veggies are cooking, add eggs and almond milk to a medium bowl and whisk. Add feta, seasonings and cooked veggies and whisk until combined.


Using a scoop, add egg mixture to Dash mini egg bite maker (to order: https://www.amazon.com/dp/B0842RTCCD/) and cook in batches until all the egg mixture is gone.


Allow to cool and enjoy! Store in the fridge for up to 5 days or freeze for up to 2 months.


**If you do not have the Dash egg bite maker, you can make these in a muffin pan or mini muffin pan**
