Skinny Cheesy Potatoes

A midwestern classic with a healthy spin! Cheesy goodness!!

Pair with eggs, bacon, sausage or fruit for a perfect breakfast!!!

RECIPE:

1 32 ounce bag of hash brown potatoes- slightly thawed

3 cups Riced Cauliflower- slightly thawed

1 1/2 cups Cottage Cheese (I used full fat)

1 cup nonfat Greek Yogurt

1 cup Chicken Broth

1 3/4 cup shredded Cheese (light)

2 Eggs

1/4 cup dried Minced Onion

1/2 teaspoon Pepper

2 teaspoons Dak's Green Zest (to order- https://daksspices.com/buy-daks

1 teaspoon Garlic Powder

Salt & Pepper to taste

Cooking Spray


Preheat your oven to 375.


In a large bowl, add hash browns, riced cauliflower, cottage cheese, 1 cup cheese, Daks, pepper, eggs, yogurt and chicken broth. Mix together VERY well.


Spray a 9x13 casserole dish with nonstick cooking spray. Add the potato mixture and spread evenly. Top with the remaining 3/4 cup cheese. Spray the top of the cheese with the nonstick cooking spray (to prevent sticking) and cover with foil.


Bake for 40 minutes covered. Remove foil and bake for an additional 15-20 minutes or until cheese is melted.
