Sausage Breakfast Casserole

This is DELICIOUS!!! A solid, protein packed Breakfast! YUM!

RECIPE:

4 Sausages (I used the AmyLu Andouille)

1 bag frozen Hash Browns

1 cup Light Shredded Cheese

1/2 cup shredded Mozzarella

8 Eggs

2 cups Almond Milk

2 small Zucchini- chopped

1/3 cup Onions- diced

1/4 teaspoon Garlic Powder

1/2 teaspoon Pepper

1 teaspoon Salt


Preheat oven to 350 and spray a 9x13 baking dish with nonstick cooking spray.


Mix hash browns, sausage, zucchini, onion and cheeses together. Pour into baking dish.


Whisk together the eggs, salt, pepper and garlic powder until combined. Pour over hash brown mixture.


Bake uncovered for 60-74 minutes or until eggs are fully cooked. Enjoy!
