Pumpkin Chocolate Chip Oatmeal Bars

A healthy Fall recipe bursting with pumpkin spice flavor, nuts and chocolate!

REAL, WHOLE food!! Pair with eggs, bacon or sausage for a PERFECT breakfast!!

RECIPE:


Wet Ingredients:

1/2 cup 100% Pure Pumpkin

2 tablespoons melted Coconut Oil

2 tablespoons pure Maple Syrup

3 tablespoons Coconut Sugar

1 Egg

1 teaspoon Vanilla Extract


Dry Ingredients:

1 1/4 cup Rolled Oats

1/2 cup + 2 tablespoons Oat Flour

1/2 teaspoon Baking Soda

1/4 teaspoon Baking Powder

1/2 teaspoon Cinnamon

1/8 teaspoon Salt

Lily's Chocolate Chips (3 servings)

1/4 cup chopped Pecans


Preheat your oven to 350 degrees. Spray an 8x8 baking pan with nonstick cooking spray.


Add the wet ingredients to a large bowl- pumpkin, coconut oil, maple syrup, sugar, egg and vanilla. Whisk until incorporated.


Add the dry ingredients- oats, oat flour, baking soda, baking powder, cinnamon, Dak's Pumpkin Spice and salt. Stir to combine. Fold in chocolate chips & pecans.


Pour into prepared baking dish. Spread smooth.


Bake 20-30 minutes, until the edges are browned. Allow to cool and enjoy!
