Oatmeal Bake with Warm Berry Sauce

This is seriously SO good!! It's fruity and hearty!

This is one of my favorite breakfasts! I pair it with eggs and it's fruity, hearty and filling!

RECIPE:

Oatmeal

1 tablespoon Coconut Oil

1/2 Berries of choice

1 cup Plain Almond Milk

1 cup Rolled Oats

1 Egg

2 teaspoons Vanilla Extract

3 tablespoons Monkfruit Sweetener

1 teaspoon Ground Flax


Sauce

1 tablespoon Arrowroot Powder

1 teaspoon fresh Lemon Juice

1/2 cup Berries of choice

3 tablespoons Pure Maple Syrup


Preheat oven to 350.


Melt the coconut oil in a medium sauce pan over medium heat. Add the berries and cook for 2 minutes. Add the milk, oats, eggs, vanilla and sweetener and stir to combine. Cook for another 2 minutes.


Add to greased 9x9 baking pan and cook for 10-12 minutes. Immediately after removing from the oven, top with flax. Allow to cool and cut into 4 servings.


To prepare the sauce:


In a small bowl, dissolve the arrowroot powder with 1 tablespoon water and whick to combine.


In the same sauce pan (save dishes!), bring the lemon juice, berries, maple syrup and 3 tablespoons water to a boil. Reduce to simmer and cook for roughly 4 minutes. Add the arrowroot mixture and cook for 5 minutes or until thick. Can be stored in te fridge for up to 5 days.


Top oatmel bake with 1/4 of the warm berry sauce and enjoy!!!
