Mixed Fruit Protein Oatmeal Bake

This oatmeal and fruit bake is perfect for breakfast or even a protein packed snack!

Adding the protein makes this a perfect meal!! So fruity and yummy!!!!

RECIPE:

2 cups Rolled Oats

1/2 cup slivered Almonds

1/2 cup Sukrin Brown Sugar (to order-https://www.netrition.com/cgi/goto.cgi?aid=4549

2 teaspoons Ground Cinnamon

1/2 teaspoon Salt

1 1/4 cup Frozen Peaches

1 1/4 cup Frozen Blueberries

1/4 cup Honey (I recommend 1/8 cup to cut down on sweetness)

2 1/2 cups Almond Milk

1/4 cup Unsweetened Coconut Flakes


Preheat oven to 350 degrees. Combine 1/2 the almonds, oats, brown sugar, cinnamon, coconut and salt in a large bowl.


Toss the blueberries and peaches in a bowl with the honey and mix well. Add frit mixture to the oat mixture and stir. Spray a 9x13 baking dish (or cast iron) with nonstick cooking spray and add in mixture. Spread out evenly.


Pour almond milk over the oat mixture and sprinkle the other 1/2 of the almonds on top.


Bake 30-40 minutes or until oats are baked. Cool and cut into 6 servings. Enjoy!
