Mixed Berry Baked Oatmeal

Stuffed with berries, naturally sweetened and a HUGE, delicious serving!

  • 1/4 cup light butter, melted

  • 1-1/2 teaspoons pure vanilla extract

  • 2 cups almond milk

  • 1 teaspoon ground cinnamon

  • 3 cups rolled oats

  • 3/4 cup sliced frozen banana (about 1 large banana)

  • 1-1/2 cup mixed berries (blueberries, raspberries and blackberries)- fresh or frozen

FOR TOPPING

  • 3/4 cup chopped walnuts

  • 1 tablespoon pure vanilla extract

  • 1 tablespoon light butter cut into small pieces

  1. Preheat oven to 350 degrees.

  2. Lightly spray one 8x8 inch baking dish (you can also spoon mixture into ramekins to make individual baked oatmeal cups).

  3. In a large mixing bowl, whisk together the eggs, maple syrup, butter, vanilla extract, almond milk and cinnamon.

  4. Stir in the oats and frozen banana slices.

  5. Fold in the berries.

  6. Pour mixture in prepared baking dish.

  7. Sprinkle chopped walnuts over the top.

  8. Dab 1 tablespoon butter broken up into small pieces over top

  9. Drizzle 1 tablespoon pure maple syrup over the top.

  10. Bake for 35-40 minutes or until the top is golden

  11. Remove from oven and cool for 5 minutes before serving.
