Healthy Breakfast Hash

This may not be the prettiest to look at but it's absolutely delicious..... & filling!

A great breakfast full of real, whole food and well rounded to boot! Really yummy!! #cleaneating #WW #myww #weightwatchers

RECIPE:

1/4 cup onion - diced

3 tablespoons butter (or olive oil)

1 lb Potatoes - diced

1/2 cup bell pepper - diced

1 cup diced tomatoes - drained

1/2 cup corn - drained

4 slices bacon, cooked and crumbled

4 Eggs

1 teaspoon Salt

1 teaspoon Pepper


In a large pan melt butter/oil on medium-high heat. Sauté the diced onion for about 3-5 minutes until soft. Add diced pepper and cook for 2-3 minutes.


Next add the salt, pepper, diced tomatoes and the potatoes. Stir until combined and cook the hash- stirring occasionally for about 10 minutes.


Stir in the corn and bacon and cook for 3 additional minutes or until the pottoes start to brown slightly. Enjoy!
