Hashbrown Breakfast Casserole
Bacon, egg and hash brown casserole that makes a GREAT meal prep!! Yum!
A savory Breakfast casserole that's easy and full of protein! Did I mention it's DELISH??

12 slices center cut bacon or turkey bacon
4 cups frozen shredded hash brown potatoes- thawed
9 eggs lightly beaten
2 cups light shredded cheddar cheese
1 1/2 cups low-fat cottage cheese
salt and pepper to taste
Preheat oven to 350 degrees, and grease a 9x13-inch baking dish.
Cook diced bacon in a skillet or oven until crispy.
Stir in potatoes, eggs, cheeses, bacon and salt & pepper. Pour mixture into greased baking dish.
Bake for 40-45 minutes. Let stand for 10 minutes before serving. ENJOY!
