RECIPE:
1 20 oz bag hash brown potatoes
12 eggs
1 pound 99% ground turkey
1 tablespoon Sage
1 cup red bell pepper (chopped)
1 cup low-fat milk
2 tablespoons dijon mustard
⅛ teaspoon red pepper flakes - optional
½ teaspoon salt
½ teaspoon pepper
1 cup light shredded cheese
Grease a 9 x 13" pan. Place hash brown potatoes in pan 1 20 oz bag hash brown potatoes
Sprinkle sausage and bell pepper over potatoes 16 oz breakfast sausage, 1 cup red bell pepper
In a bowl, combine eggs, milk, dijon, red pepper flakes and salt and pepper. 12 eggs, 1 cup milk, 2 tablespoons dijon mustard, ⅛ teaspoon red pepper flakes, ½ teaspoon salt, ½ teaspoon pepper
Pour egg mixture over ingredients in pan
Sprinkle with cheese 8 oz cheese
Place in a preheated 375 degree oven for 45 minutes.
Check casserole after 45 minutes. If becoming too brown, cover with foil. Return to oven for an additional 15 minutes.
Let casserole rest for 10 minutes before serving.
Sprinkle with fresh chopped parsley, if desired.
