Hash Brown Casserole

Delicious Breakfast casserole ready to go for those busy mornings! Yum!

Full of veggies, protein and fiber! Cheesy goodness and makes GREAT leftovers!!

RECIPE:

  • 1 20 oz bag hash brown potatoes

  • 12 eggs

  • 1 pound 99% ground turkey

  • 1 tablespoon Sage

  • 1 cup red bell pepper (chopped)

  • 1 cup low-fat milk

  • 2 tablespoons dijon mustard

  • ⅛ teaspoon red pepper flakes - optional

  • ½ teaspoon salt

  • ½ teaspoon pepper

  • 1 cup light shredded cheese


  • Grease a 9 x 13" pan. Place hash brown potatoes in pan 1 20 oz bag hash brown potatoes

  • Sprinkle sausage and bell pepper over potatoes 16 oz breakfast sausage, 1 cup red bell pepper

  • In a bowl, combine eggs, milk, dijon, red pepper flakes and salt and pepper. 12 eggs, 1 cup milk, 2 tablespoons dijon mustard, ⅛ teaspoon red pepper flakes, ½ teaspoon salt, ½ teaspoon pepper

  • Pour egg mixture over ingredients in pan

  • Sprinkle with cheese 8 oz cheese

  • Place in a preheated 375 degree oven for 45 minutes.

  • Check casserole after 45 minutes. If becoming too brown, cover with foil. Return to oven for an additional 15 minutes.

  • Let casserole rest for 10 minutes before serving.

  • Sprinkle with fresh chopped parsley, if desired.
