Four Flavor Sheet Pan Pancake Bake

I love pancakes & I REALLY love pancakes 4 ways on one sheet pan!!



These are SO good!! Different flavors everyday!! That's a WIN!!

RECIPE:

2 cups Birch Benders Paleo Pancake Mix (or mix of choice)

2 tablespoons Butter (I used Melt butter) -melted

2 tablespoons no sugar added Jam

1/2 cup sliced Strawberries

56g Lily's Chocolate Chips (4 servings)

1 Banana sliced thinly

2 tablespoons Monkfruit (or sweetener of choice)

2 tablespoons Brown Sugar (I used Sukrin- to order: https://www.netrition.com/cgi/goto.cgi?aid=4549

1 teaspoon Ground Cinnamon

3 tablespoons Monkfruit Powdered Sugar (or sweetener of choice)

Maple syrup for topping


Mix pancake mix with water until combined. Mix will be lumpy. Reserve 2 tablespoons of the batter. Brush melted butter evenly over sheet pan.


Warm up jam until pourable. Spread on 1/4th of the sheet pan. Using a toothpick, swirl the jam into the pancake batter. Top with sliced strawberries.


On another 1/4th of the pancake batter, add chocolate chips. Add sliced banana and sprinkle with 2 tablespoons Monkfuit.


Mix reserved batter with brown sugar and cinnamon. Stir to combine. Drop onto 1/4th of the pancake batter. Using a toothpick, swirl the mixture into the pancake batter.


On the final 1/4th of the pancake bake, either leave it plain or add a zero point topping. I used blueberries.


Bake at 400 degrees for 15-20 minutes or until a toothpick comes out clean.


Once cooled- Mix powdered sugar with a little water and drizzle over the cinnamon portion of the pancake bake.


Slice into 6 servings and enjoy!!
