Egg Casserole

This is my FAVORITE egg casserole! I love the sweet potatoes mixed with savory sausage! SO good!

I'm in LOVE with this casserole! It's so filling and all clean food!!

20 ounces (600g) Sweet Potatoes - diced

1 pound lean Turkey or Chicken

1 Onion - diced

1 Bell Pepper - diced

3 Garlic Cloves - minced

6 Eggs

1/3 cup Coconut Cream or Milk (unsweetened, unflavored)

1/4 teaspoon Black Pepper

1 teaspoon Salt

1 teaspoon Oil

Preheat oven to 425. On a sheet pan lined with foil, spread out sweet potatoes. Add 1 teaspoon oil and mix potatoes to coat with oil. Sprinkle with salt & pepper. Bake until you can pierce with a fork. Keep oven on.

Heat a skillet to medium high and cook the turkey/chicken. Add DAKS. Once starting to cook, add in onions, peppers and garlic. Cook through.

In a medium bowl, add eggs, coconut milk, salt & pepper. Whisk to combine.

Grease a 9x13 baking dish with nonstick cooking spray. Add meat mixture. Add potatoes and mix to combine.

Pour egg mixture over meat & potato mixture. Cover with foil and bake for 15 minutes. Uncover and bake an additional 15 minutes until egg is cooked.
