Clean Eating Egg Nests

Little nests of yumminess! Full of good whole food that's both filling and nutritious!

Full of excellent, clean ingredients and great for breakfast or even a healthy snack! The sweet potato "crust" is the perfect pairing with the eggs and ham! Try yours with sausage, bacon and even extra veggies! #cleaneating #weightwatchers #myww

RECIPE:

1 medium Sweet Potato - peeled

1 tablespoon Coconut Oil - melted

1/8 teaspoon Garlic Powder

1/8 teaspoon Smoked Paprika

Pink Himalayan Salt - to taste

12 Eggs

6 oz cooked Ham

1/2 Red Onion - diced small


1. Preheat the oven to 325. Line a muffin tin with liners.

2. Using a cheese grater, grate the sweet potato. Squeeze out as much moisture as possible. In a medium bowl, combine the sweet potato, oil, garlic powder, paprika and pinch of salt. Mix.

3. Evenly distribute the mixture into the muffin liners until the bottom is covered. Bake for 5 minutes.

4. Meanwhile, in a large bowl, beat the eggs and a pinch of salt. Pour on top of the sweet potatoes, filling the pan about halfway. Place a few pieces of meat and veggies on top. Bake for 20-25 minutes, or until eggs are cooked through.
