Chunky Monkey Quinoa Breakfast Bowl

Liven up your morning with this delicious quinoa bowl! It's like dessert for breakfast!

It may taste like desert but it is whole, real food! Did I mention it's DELISH?? Enjoy!

RECIPE:

1 cup Quinoa (uncooked)

2 cups Water

1/4 teaspoon Salt

3/4 cup Non-Dairy Milk

1 large ripe Banana- mashed

4 tablespoons PB2

3 tablespoons Cacao or Cocoa powder

2 tablespoons Syrup


In a medium pot, add the quinoa and a pinch of salt t 2 cups water. Bring to a low boil and put on the lid. Cook until liquid is gone and quinoa is fluffy- about 15-20 minutes.


Uncover and turn heat to low. Stir in almond milk, peanut butter, mashed banana, cacao powder and syrup. Warm for 1-2 minutes.


Portion out and add toppings of you choice.

Berries,

Nuts

Seeds

Granola

Jam
