Chocolate Chip Chaffles

RECIPE:
1 large egg
1 teaspoon flour

1/2 teaspoon vanilla extract
1/2 cup low-fat, finely shredded mozzarella
2 tablespoons Lily's chocolate chips
Plug in your mini waffle iron to preheat.
Add the egg,flour, sweetener, and vanilla to a small bowl and whisk together with a fork.
Stir in the shredded cheese.
Spoon half of the batter into the waffle iron and dot with half of the chocolate chips. Spread a bit of batter over each chocolate chip.
Close the waffle iron and cook for 3-4 minutes or until as crisp as you'd like.
Repeat with remaining batter.
