Cheesy Breakfast Potatoes with Bacon

OMG this is SO good and SO filling!!! Crispy potatoes and bacon make this recipe!

Protein packed, easy to reheat breakfast! The melted cheese makes the dish!

RECIPE:

  • 4 medium red potatoes, peeled, diced into small pieces

  • 1/2 cup green bell pepper, diced small

  • 1/2 cup onions, chopped

  • 3 cloves garlic, minced

  • 1 Tbs oil

  • 1 tsp salt, more or less to taste

  • 1 tsp pepper

  • 1 cup light shredded cheese

  • 10 pieces of center cut bacon

  1. In a large frying pan, heat oil over medium heat.

  2. Add potatoes. Cook until potatoes just start to brown.

  3. Stir in onions, bell pepper and garlic.

  4. Add salt and pepper.

  5. Cook until onions are translucent and potatoes are brown and crispy.

  6. In the meantime while the potatoes are cooking, cook bacon to desired crispiness.

  7. When cooked, place bacon on a plate lined with paper towels. Once cooled, crumble bacon. Set aside.

  8. When potatoes are finished cooking, turn off heat and sprinkle grated cheese over the top of the potatoes while they are still in the pan.

  9. Add bacon crumbles.
