Breakfast Hash

RECIPE:

4 Eggs

1 pound Potatoes

1 Onion- diced

6-8 slices Bacon- chopped into pieces

2 teaspoons Paprika

1 tablespoon Dried Parsley or 2 tablespoons fresh Parsley

1 tablespoon Oil

1/4 cup Roasted Red Peppers- diced

2 cloves Garlic


Dice potatoes and add to baking sheet. Drizzle with oil and add salt & pepper. Bake at 390 degrees for 35-40 minutes or until cooked though and crispy.


Add oil to large skillet and add diced onion, red peppers and chopped bacon and cook until crispy. Add the cooked potatoes, garlic and paprika- stir.


Move potato mixture to one side of the pan and crack eggs. Cook whites and leave the yolk runny if eating immediately and not reheating. If prepping or reheating- scramble the eggs fully. Stir to mix in with the potatoes. Enjoy!
