Blueberry Biscuits

Tender biscuit with fresh, sweet blueberries and the texture of sugar and glaze on top!

Easy to make and make the perfect Breakfast, brunch or even dessert! A must make!

  • 1 Tablespoon baking powder

  • ½ teaspoon salt

  • 1 egg

  • 6 Tablespoons very cold light butter - grated

  • 1 cup light sour cream

  • 5 Tablespoons milk divided

  • 1 Tablespoon lemon zest

  • 1 cup blueberries

  • 4 teaspoons lemon juice


  • Preheat oven to 400F. Line a large baking sheet with low sides with parchment paper.

  • In a large mixing bowl combine flour, 4 Tablespoons granulated sugar, baking powder and kosher salt.

  • In another bowl combine egg, grated butter, sour cream, 4 Tablespoons milk and lemon zest.

  • Add wet ingredients into the dry ingredients and stir until just combined.

  • Fold in blueberries.

  • Using a scooper or large spoon, drop biscuit dough onto the prepared baking sheet, making 12 biscuits.

  • Brush the tops of the biscuits with the remaining 1 Tablespoon milk and sprinkle with the remaining 1 Tablespoon granulated sugar.

  • Bake until golden, about 25 minutes.

  • Serve warm or at room temperature.


Optional Glaze:

  • If you want to drizzle your biscuits with a lemon glaze, in a small bowl combine confectioners sugar and lemon juice, stirring until smooth. Drizzle glaze over biscuits.
