Baked Oatmeal Cups

These little gems are full of good, whole food & are DELICIOUS!

Pick any toppings you'd like and you have a filling, good for you breakfast (or snack!)

RECIPE:

1 Egg

1 teaspoon Vanilla Extract

1 cup Unsweetened Applesauce

1 Banana- mashed

1/4 cup Honey

2 1/2 cups Rolled Oats

1/8 cup Chia Seeds

1 tablespoon Ground Cinnamon

1 1/2 teaspoons Baking Powder

1/2 teaspoon Salt

1 1/4 cup Almond Milk (or milk of choice)


Toppings: Blueberries, Raisins, Walnuts, Chocolate Chips, Goji Berries or Pomegranate Seeds.


Preheat oven to 350. Mix egg, vanilla, applesauce, banana and honey together. Add in oats, chia seeds, cinnamon, baking powder and salt, mix well with wet ingredients.


Finally pour in milk and combine.


Line a 12 cup muffin tin (or spray with non-stick cooking spray) and divide mixture between the 12 muffin cups. Add toppings (if using dried fruit- add after baking).


Bake for 30 minutes or until cooked through. Cool and enjoy!


12 Muffins:

4sp (blue & green)

2sp (purple)
