Baked Oatmeal

This mouth watering oatmeal bake is to die for! Sweet & hearty!!

Add your favorite fruit, nuts and spices to make a TON of different flavors!

  • 1.5 cup quick or rolled oats

  • 1/2 cup brown alternative- I used Lakanto Golden- to order:

  • 1/2 cup unsweetened almond milk

  • 1/4 cup unsweetened applesauce

  • 1 large egg

  • 1 teaspoon baking powder

  • 1 teaspoon salt

  • 1 1/2 teaspoons vanilla extract

  • 1/4 cup less sugar Craisins

  • 4 small VERY ripe bananas

  • Preheat oven to 350 and spray a baking dish with nonstick spray. I used a 8x8.

  • Combine all of the ingredients in a large bowl

  • Spread batter out on a cookie sheet and bake for 25-30 minutes, or until oatmeal and lightly crisp and browned around the edges.

  • This baked oatmeal stores well in the fridge, so double your recipe for a breakfast that’ll last all week!
