A healthy treat that tastes like yo're cheating but you're not!! Absolutely delicious!!

RECIPE:
1 tablespoon olive oil
1 egg room temperature
2 teaspoons vanilla extract
1/4 cup honey or SF honey
3/4 cup mashed banana about 1.5 bananas
1 cup grated zucchini *squeezed to remove water about 1 medium zucchini
1.5 cups flour
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground ginger
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/4 cup mini chocolate chips optional
Preheat oven to 350 + prepare a greased 8×4 loaf pan.
In a large bowl mix together olive oil, egg, vanilla extract, honey, banana and zucchini.
Stir dry ingredients into wet ingredients (whole wheat flour, spices, baking powder/baking soda)
Fold in mini chocolate chips if using.
Pour batter into greased loaf pan + top with additional chocolate chips if desired
Bake at 350 for 40-45 minutes, or until top of bread is golden and cake tester comes out clean. Allow the bread to cool completely for at least 20 minutes, remove from pan + enjoy!
