Protein Pumpkin ON Oats

Protein packed, easy recipe ideal for meal prep! On the go Fall staple!

Recipe:

  • ¾ cup milk of choice (I used Fairlife)

  • ½ cup old fashioned rolled oats

  • 2 tbsp pumpkin puree

  • 2 tbsp vanilla protein powder- I used Clean Simple Eats

  • 1-2 tbsp pure maple syrup depending on your desired sweetness level- sugar free

  • 1 tbsp chia seeds

  • 1 tsp vanilla extract

  • 1 tsp pumpkin pie spice

  • chopped pecans and/or whipped cream optional for topping

Instructions

  • Combine all ingredients in a medium glass jar or container. Stir until well combined, then refrigerate for at least 6 hours.

  • Garnish with chopped pecans and/or a little whipped cream. Serve!
