The BEST easy Breakfast to meal prep and enjoy all week! Low carb- High protein!

RECIPE:
1 pound chicken or turkey sausage
1 onion diced
1 red bell pepper diced
1 green bell pepper
2 garlic cloves diced
Salt and pepper
1 ½ cup Gruyere cheese shredded
1 ½ cup light cheddar cheese
6 eggs
¼ cup chives chopped
¼ fresh parsley chopped
Preheat the oven to 180ºC (355ºF). Heat a non-stick skillet to medium-high.
Add the pork sausage and break it as it cooks. Cook until browned.
Add the onion, peppers, garlic, salt and pepper and cook for 7-10 more minutes
In a big bowl, combine the sausage mixture, Gruyere cheese, half of the cheddar cheese, and eggs.
Grease a casserole dish and transfer the mixture. Top with the rest of the cheddar cheese and bake for 20 minutes, or until bubbly.
Serve with chives and fresh parsley.
