Breakfast Casserole

The BEST easy Breakfast to meal prep and enjoy all week! Low carb- High protein!

RECIPE:

  • 1 pound chicken or turkey sausage

  • 1 onion diced

  • 1 red bell pepper diced

  • 1 green bell pepper

  • 2 garlic cloves diced

  • Salt and pepper

  • 1 ½ cup Gruyere cheese shredded

  • 1 ½ cup light cheddar cheese

  • 6 eggs

  • ¼ cup chives chopped

  • ¼ fresh parsley chopped


  • Preheat the oven to 180ºC (355ºF). Heat a non-stick skillet to medium-high.

  • Add the pork sausage and break it as it cooks. Cook until browned.

  • Add the onion, peppers, garlic, salt and pepper and cook for 7-10 more minutes

  • In a big bowl, combine the sausage mixture, Gruyere cheese, half of the cheddar cheese, and eggs.

  • Grease a casserole dish and transfer the mixture. Top with the rest of the cheddar cheese and bake for 20 minutes, or until bubbly.

  • Serve with chives and fresh parsley.
