Oatmeal Protein Pancakes

Start your day with these delicious, nutritious protein packed pancakes! Absolutely yum!

RECIPE:

1 ½ cups rolled oats or 1 cup oat flour

2 eggs

4 egg whites

½ cup milk of choice (dairy or non-dairy)

1 tablespoon sugar free maple syrup

1 teaspoon baking powder

1 teaspoon ground cinnamon

Pinch of sea salt

Optional: chocolate chips, nuts, or vanilla extract


  1. Blend the rolled oats in a high-powered blender or food processor for 30 seconds, or until they turn into a flour-like texture.

  2. Add the protein powder, baking powder, cinnamon, and salt, blending again to combine.

  3. Add the eggs, egg whites, and milk to the blender, blending until everything is well mixed.

  4. Let the batter sit for 10 minutes to thicken.

  5. Heat a non-stick skillet or electric griddle over medium heat and lightly grease with avocado oil or butter.

  6. Pour the batter onto the skillet and cook each pancake for 2-3 minutes per side or until golden brown.

  7. Serve with your favorite toppings like maple syrup, butter, or fresh fruit.
