Million Dollar Chicken Casserole

Easy chicken casserole packed with protein! Ready in under an hour & absolutely yum!

RECIPE:

1 (10.5-ounce) can condensed cream of chicken soup- low-fat

1 cup low-fat small-curd cottage cheese

4 ounces light cream cheese, cut into cubes and softened

1/3 cup low-fatsour cream

1 teaspoon italian seasoning, crushed

1/4 teaspoon garlic powder

4 to 4 1/2 cups chopped cooked chicken

1/2 cup sliced green onion (reserve green tops for garnish)

1 cu breadcrumbs

1/4 cup light butter, melted

2 tablespoons sliced green onion tops, for garnish


Preheat oven to 350°F. In a medium bowl stir together soup, cottage cheese, cream cheese, sour cream, Italian seasoning, and garlic powder.

Stir in chicken and the sliced 1/2 cup green onions. Spoon chicken mixture into a 2-quart square baking dish.

Stir together crackers and melted butter. Sprinkle over chicken mixture.

Bake until chicken mixture is heated through (160°F) and crackers are golden brown, about 40 minutes. Let stand 10 minutes. Top with 2 Tbsp. sliced green onions.
