Lemon Poppy Seed Loaf

OMG this is serious decadence!!! So lemony and SO good!!

The PERFECT sweet treat for Spring or Summer! All clean, whole ingredients!!

2 cups All-Purpose Flour

2 tablespoons Poppy Seeds

1 1/2 teaspoons Lemon Zest - about 3 small or 1 large

3/4 teaspoon Baking Powder

3/4 teaspoon Baking Soda

1/4 teaspoon Salt

1 tablespoon Avocado Oil (or oil of choice)

1 Egg- room temp

1 tablespoon Vanilla Extract

2/3 cup Monkfruit Sweetener

1/2 full fat Plain Greek Yogurt

2 tablespoons Lemon Juice (about 1-2 small)

6 tablespoons Whole Milk


4 tablespoons Monkfruit Powdered Sugar

1/4 teaspoon Almond Extract

1 teaspoon Milk

Preheat oven to 350 and lightly coat a 9x5 loaf pan with cooking spray.

To prepare cake, whisk together the oil, egg and vanilla. Mix in the sugar, yogurt and lemon juice until incorporated. Alternate between adding in the flour mixture and milk, beginning and ending with the flour.

Pour the batter into prepared pan, and bake at 350 for 40-45 minutes.

To prepare the glaze, whisk together the powdered sugar, milk and almond extract in a small bowl. Drizzle over the top of the cooled loaf.
