Kale Salad

A super easy kale salad that's full of flavor!!! Love the berries, cranberries and almonds!

RECIPE:

  • 6 cups kale chopped

  • 1/2 cup dried cranberries- low sugar

  • 1/2 cup sliced almonds

  • 1/4 cup blueberries

  • 2 tablespoons olive oil

  • 1 tablespoon apple cider vinegar

  • 1 teaspoon Dijon mustard

  • Salt and pepper to taste


  • Wash and chop kale.

  • Combine kale, cranberries, almonds, and blueberries in a bowl.

  • Whisk together olive oil, vinegar, mustard, salt, and pepper.

  • Pour dressing over salad and toss.

  • Serve immediately.
