CRUST:
1 cup Flour (I used organic wheat)
1/3 cup unsalted Butter- melted
1/3 cup Maple Syrup
LEMON FILLING:
3 large Eggs
1/2 cup Plain Non-Fat Greek Yogurt
1/3 cup Maple Syrup
1/3 cup Lemon Juice
2 tablespoons Flour
1/2 teaspoon Vanilla
1/4 teaspoon Salt
TOPPING:
1/4 cup Powdered Sugar
Preheat oven to 350. Line an 8x8 baking pan with foil and spray with nonstick cooking spray.
In a small bowl, combine the flour, butter & syrup. Stir until well combined.
Add crust dough to pan and smooth with the back of a spoon. It will be a thin layer just covering the bottom of the pan.
Bake for 20 minutes & let cool for 10 minutes.
Meanwhile, combine the filling ingredients and whisk until fully combined and there are no lumps of yogurt left. Top cooled crust with filling mixture.
Bake for 30 minutes or until set.
Let the bars cool completely and sprinkle with powdered sugar. Enjoy!
