Healthy Lemon Bars

If you LOVE Lemon, you are going to LOVE these bars! So bright and flavorful!


These bars are so bright wih lemon and absolutely delicious! Clean eating at it's finest!! YUM!

RECIPE:


Crust:

3/4 cup Oat Flour (or flour of choice)

1/3 cup Coconut Oil

1/4 cup Maple Syrup

1/4 teaspoon salt


Filling:

6 Eggs

4 teaspoons Lemon Zest

1/2 cup Lemon Juice

1/3 cup Honey

1/4 teaspoon salt

4 teaspoons Coconut Flour

Preheat oven to 350. In a large bowl, combine ingredients for the crust and mix until wet, but firm consistency, like a shortbread.


Line an 8x8 pan with parchment paper. Press dough into pan and make sure you press it out evenly and into the corners.


Bake for 20 minutes or until set. Let cool.


For the filling -


While crust is baking, combine ingredients for filling and beat until smooth, liquid batter is formed. It will be runny- don't worry!!


Pour mixture on top of cooled crust and bake for 30 minutes. Cool completely then chill.


Top with a shake of powdered

sugar, cut and serve!
