French Onion Chicken Bake

Indulge in the rich & comforting flavors of French Onion chicken!! So good and protein packed!

RECIPE:

  • 2 sliced onions

  • 2 tablespoons light butter

  • 2 garlic cloves, finely chopped

  • 1/2 teaspoon black pepper

  • 1 teaspoon fresh thyme

  • 2/3 cup low-sodium beef broth

  • 2 tablespoons aged balsamic vinegar

  • 4 boneless skinless chicken breasts or thighs

  • 1/2 teaspoon sea salt

  • 1 cup shredded light mozzarella cheese

  • 1/2 cup grated Parmesan cheese


  1. Preheat oven to 400°F and prepare a baking dish with cooking spray.

  2. In a large skillet, melt butter over medium-high heat and sauté sliced onions for about 5 minutes until softened.

  3. Lower heat to medium; add garlic, black pepper, and thyme, cooking for an additional minute until fragrant.

  4. Stir in the beef broth and balsamic vinegar, cooking until onions are jam-like (about 10 minutes).

  5. Layer one-third of the onions in the baking dish, place chicken on top, and season with sea salt.

  6. Top with remaining onions and sprinkle with mozzarella and Parmesan cheese.

  7. Bake for approximately 30 minutes or until chicken reaches an internal temperature of 165°F.
