Flourless Peanut Butter Chocolate Chip Cookies

OMG Peanut Butter AND Chocolate Chips?? YES!!!

Healthy, clean eating and really yummy! A perfect pairing of peanut butter and chocolate!

1 cup Peanut Butter- or nut butter of choice

1 Egg

1/3 cup Monkfruit Granulated- or sugar of choice

1 teaspoon Vanilla Extract

4 servings (240 chips or 56g) Lily's Chocolate Chips

Preheat over to 350 degrees.

Combine all ingredients (do not add chocolate chips if you'd rather dip the cookie in the chocolate). Scoop our roughly 1 tablespoon of the dough (you want to make 16 cookies) onto a parchment lined baking sheet.

Flatten into cookie shape with hand (they will not flatten while baking). Bake for 10-12 minutes or until bakes through.

TO DIP COOKIES- melt chocolate in the microwave or over a double boiler. Once cookies are completely cooled- dip 1 side in melted chocolate. Let set.

Transfer cookies to an air tight container for up to one week (they won't last that long- they are SO good!!). Enjoy!!
