Easy Breakfast Hash

Hearty & satisfying!! Easy to make and family friendly!! Pair with some crispy toast!

RECIPE:
1/2 pound bacon, chopped or sausage
4-5 medium potatoes (I used Yukon gold) -6 large eggs
1 small onion, diced
1/2 teaspoon fine ground sea salt
1/4 teaspoon freshly ground black pepper
Parsley for garnish
In a 10 inch, oven safe skillet, cook the bacon until crispy. Then, remove the bacon and place aside on a paper towel lined plate to drain. Leave the bacon grease in the pan.
Add the small diced onion, and sauté until soft, about 2-3 minutes.
Add in the diced potatoes, and sprinkle with salt and pepper. Cook until fork tender and until they have a nice golden brown crust. 10-15 minutes.
Add in the cooked, and drained bacon. Add more salt and pepper if needed.
Make wells in the top of the hash, and break the eggs into the wells (you can season your eggs here. I add a little salt and pepper) Cook over medium heat until the egg whites start to set, about 2-3 minutes. Transfer skillet to oven, and broil on high heat until the yolks are set to your liking. I do about 2 minutes, because we like ours a little runny.
Sprinkle with freshly chopped parsley and serve!
