Dunkin Omelet Bites

These copycat Dunkin omelet bites (made healthier) are the perfect high protein B-fast!

RECIPE:

4 large eggs

¼ cup low-fat milk

½ teaspoon table salt

¼ teaspoon black pepper

¼ cup diced bell peppers your choice of color; I chose a combination of red and green

¼ cup diced onions

¼ cup light shredded cheese


Preheat your oven to 350°F (175°C). Spray a donut-shaped muffin tin with cooking spray.

In a bowl, whisk together the eggs, milk, salt, and pepper.

Distribute the diced bell peppers, onions, and meat evenly into the muffin cups.

Pour the egg mixture into each muffin cup, filling them about ⅔- ¾ full.

Sprinkle shredded cheddar cheese on top of each cup.

Bake for 20-25 minutes or until the omelet bites are set and slightly golden.

Allow them to cool for a few minutes. Gently use a butter knife to remove the omelet bites from the muffin tin.
