Cranberry & Orange Buttermilk Breakfast Bake

The perfect pairing of Orange & Cranberry! Add a little butter and syrup and it's perfection!

RECIPE:

1/2 cup Butter- light

Zest from 1 Orange

1 cup + 1 tablespoon Sugar alternative (I used Lakanto Monk Fruit- https://bit.ly/3cRLTbg

1 Egg- room temp

1 teaspoon Vanilla

2 cups Flour

2 teaspoons Baking Powder

1 teaspoon Salt

2 cups fresh Cranberries

1/2 cup low-fat Buttermilk


Preheat oven to 350 degrees. Cream butter with orange zest.


Add the sugar, egg and vanilla and beat until combined. Add flour, baking powder and salt. Stir to combine.


Add in buttermilk (I ended up using 1 cup). Fold in the cranberries.


Grease a 9" baking dish and add mixture. Spread out evenly and sprinkle 1 tablespoon sugar alternative over the mixture. Bake for 45-50 minutes or until cooked through.
