Butterscotch Squares

Easy indulgent sweet treat that's perfect for the whole family! Really yummy!

RECIPE:
1 cup smooth peanut butter
½ cup unsalted light butter
12 oz butterscotch chips- Lily's
1 teaspoon pure vanilla extract
10 oz 1 package of mini marshmallows
Instructions
Line a 9x9 baking tray with parchment paper. Set aside.
In a double boiler over low to medium heat, melt butterscotch chips, butter, peanut butter and vanilla extract. Make sure to stir frequently and avoid heating too much. This will cause the butterscotch chips to not melt properly.
Once melted, remove from heat immediately. I like to watch for about 5-10 chips remaining and turn off the heat. The remaining chips will melt due to the residual heat. Fold in mini marshmallows.
Quickly pour into tray lined with parchment paper.
Refrigerate until firm. About 1-2 hours.
Cut and serve.
