Breakfast Burrito Casserole

Loaded with protein and filling veggies! Make it ahead for a healthy Breakfast!

1 pound breakfast sausages, casing removed

1 medium yellow onion diced

2 bell peppers (any colour) diced

1/2 cup plain nonfat Greek yogurt

12 large eggs

1 cup milk- lowfst

15 ounces frozen hash browns (optional)

1/2 cup chunky salsa

5 slow carb tortillas

2 cups shredded cheddar or Mexican blend cheese- light

1 teaspoon each salt and ground black pepper

Optional for Serving

  • Sliced avocado

  • Salsa

  • Chopped cilantro

  • Sliced green onion

  • Sour cream
