Beef & Cheese Breakfast Biscuits

Large savory biscuits full of allll the GOOD things are a GREAT start to your day!

RECIPE:

  • 8 oz lean ground beef

  • 1 1/2 cups flour

  • 1/2 cup ground flaxseed

  • 4 tsp baking powder

  • 2 tsp garlic powder

  • 1/2 tsp salt

  • 2 cups non-fat Greek yogurt

  • 1 1/2 cups light shredded cheddar cheese

  • 1/4 cup chives, chopped


  • Preheat oven to 400°F. Line a baking sheet with a silicone baking mat or parchment paper.

  • Cook ground beef: In a medium skillet over medium-high heat, add olive oil. Then, add ground beef. Use a wooden spoon to crumble. Season with salt and pepper to taste. Once cooked, set aside to cool.

  • In a large mixing bowl, add flour, ground flaxseed, baking powder, garlic, and salt. Stir to combine.

  • Add Greek yogurt to flour mixture. Use a wooden or silicone spatula to mix dough. Clumps should start to form. Use your hands to help fully combine. Knead dough in bowl or flour clean surface and knead.

  • Flatten dough slightly in large mixing bowl. Add cooked ground beef, cheese, and chives. Knead to evenly distribute in dough.

  • Divide dough into 8 equal pieces. Roll into a ball and flatten like a bagel. Place on prepared baking sheet. Bake for 20-25 minutes.
