Beef & Cheese Breakfast Biscuits

Large savory biscuits full of allll the GOOD things are a GREAT start to your day!

RECIPE:
8 oz lean ground beef
1 1/2 cups flour
1/2 cup ground flaxseed
4 tsp baking powder
2 tsp garlic powder
1/2 tsp salt
2 cups non-fat Greek yogurt
1 1/2 cups light shredded cheddar cheese
1/4 cup chives, chopped
Preheat oven to 400°F. Line a baking sheet with a silicone baking mat or parchment paper.
Cook ground beef: In a medium skillet over medium-high heat, add olive oil. Then, add ground beef. Use a wooden spoon to crumble. Season with salt and pepper to taste. Once cooked, set aside to cool.
In a large mixing bowl, add flour, ground flaxseed, baking powder, garlic, and salt. Stir to combine.
Add Greek yogurt to flour mixture. Use a wooden or silicone spatula to mix dough. Clumps should start to form. Use your hands to help fully combine. Knead dough in bowl or flour clean surface and knead.
Flatten dough slightly in large mixing bowl. Add cooked ground beef, cheese, and chives. Knead to evenly distribute in dough.
Divide dough into 8 equal pieces. Roll into a ball and flatten like a bagel. Place on prepared baking sheet. Bake for 20-25 minutes.
