Apple Crisp Cream Cheese Bars

So dreamy and easy to prepare! Reminds me of apple pie in bar form! A must make!

RECIPE:

Oat Crisp Crust & Topping

½ cup quick-cooking oats

1 ½ cups flour

1 cup brown sugar sub

¼ teaspoon baking powder

¼ teaspoon baking soda

1 ½ teaspoons cinnamon

¾ cup light butter- melted

Cream Cheese Layer

2 8 oz packages light cream cheese - room temperature

1 teaspoon vanilla

2 eggs


Apple Pie Layer

3 large Granny Smith apples peeled, cored, and thinly sliced

1 tablespoon flour

1 tablespoon brown sugar sub

1 teaspoon cinnamon

Caramel topping for garnish


Oat Crisp Crust & Topping

  • In a large bowl, toss together the oats, flour, brown sugar, baking powder, baking soda, and cinnamon.

  • Add melted butter to mixture and using a fork, mix mixture together until it’s crumbly.

  • Measure out 1 ¼ cups of the oat mixture to use for topping; set aside.

  • Pour the remaining oat mixture into a greased 9 inch baking pan and press firmly to the bottom of the pan.

  • Bake 15 minutes, or until a golden brown. Make cream cheese mixture while crust is baking.

Cream Cheese Layer

  • In a large bowl, add softened cream cheese, sugar, and vanilla and beat with mixer until smooth and creamy.

  • With the mixer on low, add the eggs, one at a time, until fully incorporated. Set aside.

Apple Pie Layer

  • In a large bowl, combine apples, flour, brown sugar, and cinnamon.

How to Assemble Apple Crisp Cream Cheese Bars

  • Scatter apples on top of the cooked crust.

  • Spread cream cheese mixture over the top of the apples.

  • Top cream cheese layer with oat mixture.

  • Bake 38-45 minutes.

  • Let cool completely, then refrigerate until ready to serve.

  • To cut, easily remove the cheesecake bars from the pan by lifting out the parchment paper.

  • Top with caramel topping when you are ready to serve if desired.
