Turkey Sliders with Sweet Potato "Buns"

Absolutely delicious little sliders! Full of protein and healthy carbs!

Perfect lunch or even dinner!!! The burgers have excellent flavor- the bacon makes them! Top with some cheese!

4 strips of Bacon

1 pound 99% Ground Turkey

1/2 cup Panko Breadcrumbs

2 large Eggs

1/2 Grated Parmesan Cheese

1 teaspoon Dried Basil

1/2 teaspoon Cumin

1 tablespoon Soy Sauce or Coconut Aminos

1 large or two medium Sweet Potatoes

1/2 cup Light Shredded Cheese

Cook bacon in a skillet or microwave. and crumble. Combine first 8 ingredients and put in fridge for 30 minutes.

Preheat oven to 425 degrees. Cut sweet potatoes into 12 rounds, about 1/4" thick. Add sweet potatoes to a sheet pan and bake for 20-30 minutes or until cooked through.

Remove potatoes and form 6 burgers and place on the same baking sheet. Bake for 20 minutes or until cooked through.

Assemble sliders and top with cheese and condiments of choice!
