Turkey Quinoa Pizza Bowl

RECIPE:

  • 2 cups quinoa cooked

  • 1 pound 99% ground turkey

  • 2 tablespoons poultry seasoning

  • 1 onion diced small

  • 1 cup mushrooms sliced

  • 2 teaspoons Italian seasoning

  • 1/2 teaspoon Kosher Salt

  • 6 ounces unces tomato paste

  • 2 cups spinach chopped

  • 12 tablespoons parmesan cheese - shredded

  • 1 teaspoon red chili flakes

  • 1 15 ounce can diced tomatoes


  • In a skillet on medium heat, crumble turkey, add poultry seasoning and cook until browned and almost cooked, about 5-8 minutes, turning occasionally to ensure even browning.

  • Add onions, mushrooms, italian seasoning, salt and tomato paste. Cook another 5-6 minutes, until onions are softened and mushrooms are cooked through.

  • Toss in chopped spinach and diced tomatoes. Stir and allow to come to a simmer. Cover and cook another 2-3 minutes, until spinach is wilted and everything is heated through.

  • Pour in cooked quinoa and combine thoroughly. Divide into bowls and top with cheese and pepper flakes.
