The Ultimate Chicken Noodle Soup

Comfort food at it's finest!! Homemade chicken noodle soup is just what the Dr. ordered!

Don't skip the chicken thighs as they make this recipe AMAZING! Of all the chicken soups out there- this one is the ULTIMATE!!

RECIPE:

2 pounds Chicken Thigh

1/2 teaspoon Salt

1/2 teaspoon Pepper

1 tablespoon Oil

1 large Onion- chopped

1 Garlic clove- minced

10 cups Chicken Broth

4 Celery ribs- chopped

4 medium Carrots- chopped

1 teaspoon Thyme

1 package Fiber Gourmet Pasta (to order- https://www.netrition.com/cgi/goto.cgi?aid=4549 )

1 tablespoon Parsley

1 tablespoon Lemon Juice


In a large stock pot, add oil. Once warmed, add in chicken and season with salt & pepper. Cook chicken until browned on both side- about 3-4 minutes. Remove from pot and set aside. Do not discard the drippings!


Add onion, carrots & celery to the drippings, cook and stir over medium-high heat until tender, 4-5 minutes. Add garlic, cook 1 minute longer. Add broth, stirring to loosen browned bits from pan. Bring to a boil. Return chicken to the pot. Add thyme and reduce heat, simmer, covered until chicken is tender nd cooked through. 25-30 minutes.


Transfer chicken to a plate. Add noodle to broth and cook until tender. Dice chicken and return to pot. Stir in parsley and lemon juice. Add additional salt & pepper as needed.
