Tater Tot Casserole

Delicious comfort food!! Family friendly & kid friendly!!

A big hearty portion full of protein, veggies and goodness!!!

  • 1 pound 96% lean ground beef

  • 1/2 medium yellow onion, diced

  • 1 teaspoon garlic powder

  • 1 teaspoon kosher salt

  • 1 tablespoon Worcestershire sauce

  • 1 (10.75-ounce) can cream of mushroom soup- I used Healthy Request

  • 1 (15-ounce) can green beans, drained

  • 1 (15-ounce) can kernel corn, drained

  • 2 cups (8-ounces) shredded cheddar cheese- Light

  • 1 (16-ounce) package frozen tater tots

  1. Preheat the oven to 350°F. Lightly grease a 9x13 baking dish with cooking spray. Set aside.

  2. Warm a large (10”) skillet over medium-high heat. Add ground beef, onion, garlic powder, and salt to skillet. Cook until the beef is cooked through, using a spatula to break up the ground beef as it cooks.

  3. Add mushroom soup, green beans, corn, and 1/2 cup cheese to the beef in the skillet. Stir to combine.

  4. Spread the beef mixture into the prepared baking dish.

  5. Arrange tater tots in a single layer over the ground beef mixture.

  6. Sprinkle the remaining cheese over the top of the tater tot casserole.

  7. Bake uncovered for 30-40 minutes until tots are golden brown and hot.
