Taco Salad

Low-carb, full of flavor and a filling meal!! Makes a GREAT meal prep!

The warm ground beef topping this cold, crisp, taco flavor filled salad is PERFECTION!!

1 pound 93% ground beef- cooked and drained

6 cups chopped or shredded lettuce

2 roma tomatoes

3/4 cup shredded carrots

1/4 cup chopped red onion

3 tablespoons taco seasoning

1/4 cup light shredded cheese

160g avocado

16 tbs salsa

4 tbs light sour cream

  1. Cook ground beef until browned. Add taco seasoning & water and allow to simmer for 1-2 minutes.

  2. Chop tomatoes, onion and slice avocado.

  3. Assemble salad with lettuce, veggies, top with cheese, avocado, sour cream and salsa.

  4. Enjoy!
