Steak Bites w/Sweet Potatoes & Peppers

Whole 30 approved and packed with TONS of flavor and huge pops of vitamins!

Easy weeknight or busy weekend meal and it's ready in 45 minutes or less!!!

RECIPE:

1 large Sweet Potato (about 12oz) diced into 1" pieces

1 teaspoon Salt

1 tablespoon Oil

1 pound Flat Iron Steak- diced into 1" pieces

4 Green Onions- thinly sliced

2 tablespoons Soy Sauce or Coconut Aminos

2 teaspoons Pepper


Placed the diced sweet potatoes in a microwavable bowl and sprinkle with 1 teaspoon salt and microwave 4-6 minutes or until you can pierce it with a fork.


Heat large skillet over high heat. Add 1/2 tablespoon oil and warm- add steak in a single layer and cook until browned turning every couple minutes. Remove with slotted spoon and set on plate and push aside.


Add the other 1/2 tablespoon oil and add the sweet potatoes. Toss to coat and cook until browned- 3-4 minutes. Add the garlic and sauté until fragrant.


Add the bell pepper and scallions and toss with the potatoes. Sauté until tender- about 3-4 minutes.


Add back in the steak and soy sauce and cook an additional 1-2 minutes or until the liquid is evaporated. Add the pepper and stir. Serve & enjoy!
