Smoked Cheddar Mac & Cheese

2 packages Fiber Gourmet Pasta - to order: https://www.netrition.com/cgi/goto.cgi?aid=4549
1 cup Light Shredded Cheese
1/2 cup Parmesan
1 cup Whole Milk (divided)
2 teaspoon Dijon Mustard
1 clove Garlic - minced
1/2 teaspoon Salt
1/4 teaspoon Pepper
2 tablespoons Butter (I used Melt Plant Based Butter)
1 tablespoon Tapioca Starch (or Cornstarch)
3/4 cup Mozzarella Cheese
Add both packages of pasta to instant pot with 3-4 cups of water. Add 1/2 cup of milk, salt, pepper and 1 cup of shredded cheese Set on manual-high for 8 minutes. Manually release pressure.
While cooking, mix together the tapioca starch and milk until combined.
Stir and add butter, mustard, garlic and milk/tapioca starch mixture. Add mozzarella. Stir to combine. If desired, add mac and cheese to baking dish and put under the broiler for 3-5 minutes until top is browned.
