Slow Cooker Jambalaya

1 Onion- diced
2 stalks Celery- diced
1 Green Bell Pepper- diced
3 cloves Garlic
4 Sausages (2-3sp each)- cut into coins
28 oz can Diced Tomatoes
1 tablespoon Oregano

1 pound large Shrimp- thawed
1 cup Rice (uncooked)
1/2 teaspoon Salt
1/2 teaspoon Pepper
Parsley for garnish
Add all ingredients and 2 cups of water to your slow cooker. Cook on low for 4-6 hours stirring and checking the water. Add additional water if needed.
