Quinoa Taco Bowls w/Quick Guac
I am obsessed with these taco bowls! They are packed with flavor and very filling! Oh, did I mention low point??

2 cups cooked Quinoa (1 cup dry)
15oz can Black Beans - drained & rinsed
15oz can Pinto Beans - drained & rinsed
Taco Seasoning to taste (I used 1 packet)
Quick Guac (recipe below)
Toppings of choice
QUICK GUAC RECIPE:
Ripe Avocados (I used a tiny one each day)
Juice of 1 Lime
Garlic Salt to taste
- Mash avocado and add lime juice and garlic salt and stir to combine-
Cook Quinoa (I use broth in place of water). Add beans and taco seasoning to quinoa and stir to combine. Divide quinoa mixture into 4 bowls and add toppings. Stir to combine and enjoy!
