Pineapple Chicken Stir-fry

Part two of last weeks meal prep! This is absolutely DELICIOUS!!!



Using the reserved Chicken & Orange Sauce from last weeks meal prep (Orange Chicken Bowl) make this absolutely AH-MAZING stir-fry!!

RECIPE:

1 Red Bell Pepper - chopped

2 cups chopped Purple Cabbage

6 ounce Snow Peas - trimmed

1 small Pineapple- diced

Leftover cooked Chicken Breast (from last week)- chopped

Leftover Orange Sauce (from last week)

1/4 cup chopped Cilantro

1/4 cup Slivered Almonds- toasted if desired

2 Green Onions- sliced


In a large skillet sprayed with nonstick cooking spray over medium heat, add pepper, cabbage, snow peas and green onions. Cook for about 5 minutes.


Add pineapple, chicken and orange sauce and stir to combine, Heat through.


Serve with rice if desired. Enjoy!
