Pesto Baked Mac & Cheese

This is D-E-C-A-D-E-N-T and incredibly DELICIOUS!! Wowzers!!

The perfect pairing of mac & cheese, pesto and baked goodness! Seriously a MUST make!!!

RECIPE:

16 ounces Pasta (Points based on Fiber Gourmet- https://www.netrition.com/cgi/goto.cgi?aid=4549

1/4 cup Pesto

3 tablespoons Bacon Bits

2 tablespoons Butter

2 Cloves Garlic

2 Tablespoons All Purpose Flour

2 1/2 cups Whole Milk

8 ounces Light Shredded Cheese

1/4 cup Panko Breadcrumbs

1/4 cup Parmesan Cheese

Salt & Pepper to taste


Cook pasta as directed. Drain and transfer to another bowl and keep warm.


Add butter to the same pot the pasta was cooked in and melt over medium-high heat. Stir until butter is melted. Whisk in flour and continue to whisk until browned, about 1 minute. Slowly add in milk, heavy cream, salt & pepper to the pan and whisk until there aren't any lumps. Bring to a boil, stirring frequently. Reduce heat to medium.


Stir in shredded cheese, stir until melted. Add pesto and half of the bacon, stir. Transfer mixture to bowl with pasta, stir to combine and pour into prepared baking dish.


Mix the panko breadcrumbs and parmesan cheese together in a separate bowl. Sprinkle over the top of the pasta.


Bake in preheated oven until bubbly nd just starting to brown, about 20 minutes. Top with remaining bacon.


Preheat the ovens broiler. Place the pasta under the broiler until browned, about 1 to 3 minutes. Garnish with chopped basil or parsley.
