Parmesan Spinach Mushroom Pasta Skillet

1 package Fiber Gourmet Penne Pasta (to order- https://www.netrition.com/cgi/goto.cgi?aid=4549
1 tablespoon Oil
3 cloves Garlic- minced
14oz Mushrooms- sliced
1 pound Chicken Tenders (optional)
10 ounces fresh Spinach
1/2 cup Beef Broth
Salt & Pepper to taste
1 teaspoon Italian Seasoning
1/2 cup Parmesan Cheese
1 teaspoon Red Pepper Chili Flakes
Cook the pasta per package directions.
Heat oil in a large skillet. Add the mushrooms and chicken (if using) and sauté for about 3 minutes until lightly browned.
Add the garlic and cook for 30 seconds. Add vegetable broth to deglaze the pan. Reduce the heat and cook for another 1-2 minutes.
Add the spinach and cook until wilted. Add salt, pepper and chili flakes.
Add drained pasta and stir. Add Parmesan cheese and stir to combine. Serve and enjoy!
